Grilling while camping can be questionable sometimes, depending on what your grill is. We are not partial to cooking bare metal on grills over fire pits due to the soot and ash that collects on the meat, and we are not fond of the health issues associated with cooking on rusty metal of the barbecues found at some campgrounds. So, we love this recipe from AdventureParents.com for smothered chicken because it allows us to cook over open fire pits and on barbecues without running into the previously mentioned
phobias issues.
Camping Smothered Chicken Recipe
What you need
- Two skinless chicken breasts
- Two quartered rings of green bell pepper
- One quareted slice of white onion
- Garlic Salt
- Mrs. Dash seasoning
- Shredded mozzarella cheese
- Sheet of tin foil big enough to wrap two chicken breasts
- Sprinkle some Mrs. Dash and garlic salt on the chicken breasts
- Wrap chicken in foil
- Put foil wrapped chicken on grill over heated coals
- Cook chicken for around 6 minutes
- Flip chicken breasts
- Cook for 2 minutes, then inspect; chicken shouldn’t quite be done yet
- Add onions and peppers, re-wrap and place back on grill
- Cook for another 2 minutes, then inspect
- Add shredded cheese, cover, and place back on grill
- Let the cheese melt
- Inspect. Should be done.
Serve it up with a cold beer, pair with tortilla chips and some salsa.
